Description
Named after one of Andi’s favourite words, this wine is slightly textural from a touch of old oak contact and partially wild fermented. It has a crisp clean acid line and brings to mind citrus fruits including lemon and grapefruit, white peach, kaffir lime leaf
This wine matches well with most seafood dishes and soft cheeses (goats cheese is our fave!) and is always best shared with friends.
The Winemaking:
2 tons of fruit were hand-picked @ 10.5Be and whole bunch pressed. Half was transferred to barrel for a wild ferment – half to stainless steel with inoculation. Later most transferred to stainless steel to preserve the aromatics in hot temperatures we were having last summer. One barrel left to wild ferment and blended in to give texture and complexity. the wine was left on its lees for 2 months before being racked and crossflow filtered into bottles.
The wine is vegan friendly, bone dry with no MLF
